When I woke up yesterday I was pretty grumpy. 9 weeks of lack of sleep is starting to wear on me. Someday my son will sleep longer. At least that is what I keep telling myself. So, to get me out of my funk I thought I should bake something for breakfast. My plan worked! Along with a yummy cup of coffee.
I have been wanting to make this recipe for awhile. Last month was my first attempt, but we happened to be having some severe weather and our power went out. The oven was preheating when the power went out. Huge bummer. Our power was out for over a day so I was unable to make it. So, today was take two. The original recipe calls for just sugar and cinnamon. Personally thought dark brown sugar would go great in this recipe so I added that to the recipe. I also liked that it crisped the ends and top to give it a slight crunchy texture, but maintained its softness in the middle. I forgot to add a whole teaspoon of cinnamon, but it was still good. I am a cinnamon lover so I wish I didn't forget that other teaspoon, but for those of you who are not just know it is still yummy without it. After the 5 minutes of cooling I flipped the bread onto a serving platter so the sauce could run back over it. It was delicious! Then I drizzled the glaze on, spreading the pieces just a tad to get the glaze in between them, and dug in. The extra sauce and glaze around the bread is great for dipping the pieces in.
The bake time took longer for me because I am impatient and didn't want to wait any longer. I let it thaw about 1.5 hours. This bread is probably better with a brunch since there's quiet a bit of wait time. It says it serves 8, but if this is the only thing you are eating for breakfast it would serve closer to 4.
It was great to have a warm breakfast this morning and to see my family enjoy it. Just what I needed to perk me up so I could enjoy the day with them.
