Dinner is my favorite meal. Not because I like the food better (I prefer breakfast for that). It is because every night we sit down as a family and enjoy dinner together. It is the one thing that is consistent every night. The TV is not. Computers are not being typed on and cell phones are put away. It is a time to enjoy each other's company no matter how hectic the day has been. This is how my husband and I were raised and I hope it is something our children cherish as well. This has proven harder to do since having our son. Life is so- busy with a 2 1/2 year old and 9 week old baby. I always make sure to have a few quick fix meals on hand for days that are just too hectic. This is one of those meals that you can really enjoy and tastes great, but didn't take long to make.
The very first thing you want to do is to start warming your pitas. I wrapped them together in foil and put them in the oven at 350 degrees. You can do them in the microwave as well and it only takes about 30 seconds. If the pitas are not warm they will tear, so do not skip this step. I also suggest leaving any extra pitas in the oven or unheated in the microwave until they will be used. I made my husband two right away and by the time he ate his second one his pita was breaking in half. Once everything is cooked and prepped, take your pitas out of the oven and put everything together. There just happened to be kalamata olives in my refrigerator so I used those on the sandwich. They are tangier than regular black olives which I found to be a great contrast to the seasoned steak. The olives were my daughters favorite part since she picked every last one out of her sandwich before she would touch the rest. Then I sprinkled feta over the tops of the sandwich. I did not measure the olives or the feta. I customized them with more or less to each family members preference. My husband and I both felt it could have used a sauce. The next time I make these I will be making a Tzatziki sauce. I think it will really round out the sandwiches and make them fantastic.
I typically like to make everything from scratch, but that just wont happen some days. It is always nice to have these quick recipes as "safety nets" for when you just have no clue what to make for dinner or are short on time.

You really make it seem so simple with your presentation but I find that topic to be really something that I think I would under no circumstances undertsand. It seems too complicated and also really broad for me. I am looking forward for your next post, I will try to get the hang of it!
