Homemade Oreos

Yields: 12 sandwich cookies
Prep: 10 minutes
Cook: 20 minutes
Bake at 350 degrees

Ingredients

Cookie:
1 box devils food cake mix
2 eggs
1/3 cup vegetable oil

Filling:
4 ounces cream cheese, softened
1/4 cup butter
1 1/2-2 cups powdered sugar
1/2 teaspoon vanilla extract

Directions:
Mix cake mix, eggs, and vegetable oil together.  The batter will be very thick so don't use a whisk.   Roll dough into balls smaller than a golf ball.  Place cookies on a parchment paper lined cookie sheet.  Pat down with fingers so the balls form round disk shapes.  There will be 12 cookies per cookie sheet.  Bake for 8-10 minutes (I did full 10) then take out of the oven and leave on the cookie sheet for 3 minutes.  Then remove cookies and place on a wire rack to finish cooling.  Once cooled make the frosting.  Then frost the bottoms of the cookies and sandwich them with the remainder.  Serve chilled.


Oreos remind me of camping and my grandpa.  When we were little my family and I were in a camping club.  It was so- much fun.  Pretty much the whole camping club was filled with grandparent age members so they were always giving us tons of attention.  My grandparents were in the club as well.  It was something so special to share with them.  It was an extra special treat to stay one at a time in my their motor home.  My grandpa would make us a very small cup of cappuccino.  As we got older the amount grew as well.  It was such a delight.  They also always had oreos, and mint gum but that is a whole other story.  Sometimes my grandpa would slip us a few oreos.  I would savor them.  My mom gave me carrots and grandpa gave me oreos.  :)  Even though these are not exactly like the packaged oreos we buy at the grocery store, the memories are still there with each bite I take.

These oreos are a cross between cakester oreos and regular oreos.  They have a crunch on the outer edge but softer towards the middle.  I prefer them to be more crunchy so I baked them for the full 10 minutes.  If you like the softer ones bake them less.

Roll into balls, place on cookie sheet, pat flat
Smooth Ridges so cookies bake even
Perfect! 



Once you make these it is hard to go back to the regular cookie.  They are so scrumptious.  I mean, who doesn't love a gigantic oreo?  The best part is you can say you only ate one and not feel guilty about it.  ;)
