Ingredients:
1 cup canned 100% pumpkin puree
1 cup sugar
1/2 cup vegetable oil
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
3 cups semi-sweet chocolate chips
Directions:
Mix pumpkin, sugar, oil, and egg in a large bowl or electric mixer; mix well. In a separate medium bowl combine flour, baking powder, cinnamon; mix well. In a small bowl dissolve baking soda in the milk, then add to pumpkin mixture. Add the flour to pumpkin mixture and mix well. Add vanilla and chocolate chips and mix gently until incorporated. Place spoonful size cookies on a greased or parchment lined baking sheet (I used parchment paper) and bake for 10-14 minutes. When finished baking, immediately remove cookies from cookie sheet and place them on a cooling rack.
Then sit back and enjoy this wonderful, fluffy, moist cookie.
My sister inlaw and her family came over yesterday evening so we could exchange some things we needed to give each other ( rocking chair, kids shoes, iHome radio, Christmas pajamas). You know "normal stuff". It turned into a spur of the moment dinner at my house and it was just what my heart needed. I made my first ever successful roast and homemade gravy. It was amazing. To top off all that deliciousness I made pumpkin chocolate chip cookies. I have been making these quiet a bit this fall and they are like a round fall pillow of sweet goodness that I can't stop eating. I first tested them out on my husbands co workers. They seemed to enjoy them because one even messaged me. That is when I knew I had a winner on my hands.
I didn't change anything with the directions, because I thought they turned out perfect the first time. I found that when I use a big tablespoon measurement the cookies took about 12-13 minutes to bake. I also went by feel. They should have a slight bounce back and shouldn't be really squishy. My first tray or two I made sunk down because they were not baked enough. They are baked correctly when they keep their puffiness out of the oven.
A spur of the moment dinner party with an experimental roast and pumpkin chocolate chip cookies was just what I needed yesterday. I had been so focused on things I wanted to get done to really enjoy everyone and everything around me. Baking and cooking is just a great way to keep me grounded and be thankful for everyone in my life.
